Diana's One Skillet Lamb Chops

I created this recipe. I don't have exact measurements. This is something I threw together one night when in a hurry and I just threw everything in my cast iron skillet and hoped for the best. My family loved it!

In a large skillet add a couple tablespoons olive oil, and 1 clove garlic, diced. Sear (fry) 6 - 8 lamb chops on each side just until browned to seal the meat.

After browned, add about 2 cups chicken broth to cover the chops. Add quartered or halfed potatoes on top the meat, sliced onions, (I have added carrots to this before too, add what you like and experiment) and drained green beans. Sprinkle with fresh ground pepper and fresh ground cumin. (or use pre-ground)
Add a little parsley over top all and cover and let simmer one hour or until potatoes are tender.
